Matcha Poppy Seed Muffins

I had a rare fit of baking inspiration this week and created these muffins, which my kids actually liked rather than tolerated.

Matcha Poppy Seed Muffins

Ingredients

1 3/4 cup flour

1/2 cup granulated sugar

2 teaspoons baking powder

1 Tablespoon poppy seeds

2 Tablespoons matcha powder

1/4 teaspoon salt

1 egg, beaten

3/4 cup milk

1/4 cup vegetable oil

1/2 teaspoon almond extract

Preheat oven to 400 degrees F. Grease or line a muffin tin. In a medium bowl combine the flour, sugar, baking powder, poppy seeds, matcha powder, and salt. Make a well in the center and set aside. In another medium bowl combine egg, milk, oil, and almond extract. Add egg mixture all at once to the flour mixture. Stir just until moistened.

Spoon batter into prepared muffin cups. Bake for 18 to 20 minutes, until a toothpick comes out clean. Cool in tin on a wire rack about 5 minutes, remove from tin and serve warm, preferably with a cup of tea or coffee.
